Pesto is one of my favorite foods…sauces…side dishes? 

Pesto Pasta

I just love pesto. 

When I started WW I knew I had to try and make my own pesto. A pesto that not only tasted really good, but that was a little lower in points and calories. Don’t get me wrong, there is nothing wrong with enjoying regular pesto, but I wanted to create something that I can literally put on everything but not use all my points for pesto! 

So I searched the WW app and found this pesto recipe! I tried it out and it was amazing BUT after making this a few times I made some tweaks which I think makes it extra perfect! 

This pesto is great with pasta, on sandwiches, with zucchini noodles, chicken salads….I literally put this on everything and it’s so so good! 

You can first toast the pine nuts on the stove until they are golden brown and it makes this pesto SO good, but I found that I just like to throw everything into the blender without toasting the pine nuts too and in my opinion, it’s a little quicker and tastes just as good! 

This pesto is a great low-fat pesto that is low WW points and a lower-calorie pesto option.

Pesto Sauce

Yield: 8 Servings

Serving Size: 2 Tbsp = 1 WW Blue Point

Pesto Sauce

Ingredients

  • 2 Tbsp Pine nuts
  • 2 cups Fresh Basil leaves
  • ¼ cup Reduced-sodium chicken broth or Veggie Stock
  • ¼ cup Grated Parmesan cheese
  • 1 Tbsp Olive oil
  • 3 to 4 medium peeled Garlic cloves
  • 1 tsp Table salt

Instructions

  • Place pine nuts in a small skillet and roast the pine nuts over medium heat until golden. Make sure to stir or shake the pan frequently to prevent burning. This usually takes about 3 minutes. Transfer nuts to a plate to cool. (We have also followed this recipe without toasting the pine nuts and really enjoyed it too.)
  • In a blender or food processor, combine pine nuts, basil, broth, cheese, oil, garlic and salt; process until smooth and thick. If the Pesto is too thick you can thin by adding ¼ cup extra Chicken or Vegetable stock.
