Homemade Chicken Tortilla Soup

One chilly evening after getting home from work we decided to order some Chicken Tortilla soup.  This quickly became one of our go to’s for ordering dinner in.  After a few times ordering in we decided to try to make our own Chiken Tortilla Soup.  We tried the WW recipe from the WW app and made a few adjustments to adapt the tastes to our liking.  We feel as if we won the lottery with this fast and easy Chicken Tortilla Soup recipe and we are so excited to share this healthy and delicious Homemade Chicken Tortilla Soup recipe with you.

Chicken Tortilla Soup

Ingredients

  • 1 tsp Olive oil
  • 1 1/2 cup(s) Uncooked onion(s) (chopped),
  • 1 1/2 tsp Salt
  • 4-6 Cloves Garlic Finely Chopped
  • 2-3 Medium Jalapeño pepper(s) (seeded and minced)
  • 2 tsp Chili powder
  • 6 cup(s) Reduced-sodium chicken broth
  • 1 15 oz can Canned diced tomatoes (fire roasted-variety, drained
  • 20 oz Uncooked boneless skinless chicken breast
  • 2/3 cup(s) Fresh lime juice
  • 6 Tbsp Shredded reduced-fat Mexican-style cheese
  • 12 chip(s) Tortilla chips crushed

Instructions

  • Heat oil in a large soup pot set over medium heat.
  • Add onion and salt; cook, stirring often, until onion is softened, 5-10 minutes.
  • Add garlic, jalapeño, and chili powder; cook, stirring, 1 minute.
  • Add broth, tomatoes, chicken, and lime juice; stir to combine.
  • Bring to a simmer and cook, covered, until chicken breasts are cooked through, about 20 minutes.
  • Remove chicken from soup and shred with 2 forks; return chicken to the pot with Zucchini and Carrots
  • Cook Soup for additional 4-5 minutes to warm zucchini and carrots
  • Serve soup garnished with cheese and tortilla chips.

Notes

The original recipe is taken from the WW App. I did not create this recipe but I added my own twist to it and just wanted to share my thoughts and experience with making this recipe.

Jalapeño and chili powder can be adjusted to taste and heat level desired

Toppings of chips and cheese may adjusted to personal preference
