Making a Little Disneyland Valentine’s Day Cheer at Home with Mickey Valentine’s Day Rice Krispy Treats Recipe

I have the sweetest treat to share with you today!

I don’t know about you, but I love Rice Krispy treats. I especially love getting Rice Krispy Treats in Disneyland when they are so cute and themed and covered with chocolate and sprinkles! 

Since I can’t get them in Disneyland right now, or every day, I thought I would make some at home!

Being on a weight loss journey, being on WW, and trying to change the relationship I have with myself and with food- this was a little tricky. I wanted to keep these as “normal” to the original recipe as I could and not add in fake marshmallows, sugar-free everything and make them so “diet” friendly that 

1. They didn’t taste as good. 

2. I would only be adding to my disordered way of viewing food and treats deemed “bad” for you. 

I did a lot of thinking and I decided to make a few changes to make these rice crispies work better for me and my goals but also keep them as true to the original as possible. 

The added toppings, additions, or size you have will affect the points, but I think when we want a sweet treat, have the treat! Have it, enjoy it, and move on! Knowing it’s not bad for you, it won’t ruin your progress and it will satisfy that sweet treat craving! 

I think I created the perfect little rice crispy treat that I am super proud of! It’s no Rice Crispy treat on Main Street, but honestly, it comes pretty close!

These little treats are so good!!! I also added some with chocolate, sprinkles, and freeze-dried strawberries. Amazing!!!! 

Like I said, keep these additions in mind if you are counting points or calories. 

I am not going to get into the whole debate if you are on WW and count freeze-dried strawberries as points- which technically they do have points in them, BUT I know a lot of people don’t track fruit at all. So I am not telling you what to do, but for me, I am aware of it, but do not track the strawberries for this recipe. But of course, do what works best for you! 

I also made some of my treats Mickey-shaped, which is a little larger than the size of the original. So if using cookie cutters, make sure to keep in mind the amount of rice crispy you are having based on the size of your cutter.

For the chocolate, I drizzled some which the chocolate which seemed to work best, and saved on some points. But I also dipped the ears in and covered both sides and just covered the top of the treats on one side too. 

Honestly,f the chocolate I used, which is sweetened with stevia, the points weren’t too bad regardless of how you decorated. So whichever method you choose to use, keep the points in mind. If drizzling I suggest using a piping bag and drizzling the chocolate on top that way- it makes it a lot easier and a lot more even!

Serving Size: 1 Treat is 3PTS on WW Blue (4PTS with Chocolate)

Valentine's Day Rice Krispy Treats


  • 2 Tbsp Smart Balance Light Butter Spread. (or any light butter spread) 4 PTS
  • 3 Cups Mini Marshmallows 24 PTS
  • 5 Cups Rice Krispy Cereal 16 PTS
  • 1 tsp Vanilla Extract 0PTS
  • 1 2oz bag of freeze-dried strawberries (optional)
  • Lily's Dark Chocolate Chips (optional) 30 chips are 1PT.
  • Sprinkles (optional)
  • Cookie Sticks or Popsicle Sticks (optional)
  • Cooking Spray


  • Put Rice Krispy Cereal into a large mixing bowl
  • If adding Strawberry break the strawberries into very small pieces (dust-like) and pour into the rice cereal
  • Melt smart balance butter spread in a saucepan over medium heat
  • Add marshmallows and stir until completely melted.
  • add vanilla extract and stir
  • Remove from heat and pour over the Rice Krispy Cereal.
  • Sir/Mix until ingredients are completely combined
  • (Pro Tip: spray spoon/hands with cooking spray so that the mixture doesn't stick to hands or spoon)
  • Pour mixture into a sprayed 9x13 baking sheet and spread evenly.
  • Allow Mixture to Cool for about an hour before cutting or adding chocolate
  • Cut 9x13 sheet of Rice Krispy Treat into 16 even pieces or use desired cookie cutter shape.
  • If you want to put them on a stick, then now is time to Push Cookie or Popsicle Stick into the treat
  • Melt Chocolate in the microwave making sure to follow directions on the bag for melting chocolate. I do about 15 seconds at a time- stirring in between- until the chocolate is melted. You can melt in smaller batches to keep track of points easier or melt altogether.
  • Dip the rice crispy treats in the chocolate or drizzle on top.
  • Add sprinkles

I am so beyond happy with how these treats turned out.  Super cute and super delicious.  I dropped some off to my family and friends and they loved them as well.  If you are in the mood for something sweet, cute and easy to make- these are for you.  If you try them make sure to take a picture and tag on social media me so I can see what you create.
