        Happy 4th of July Weekend!  Last year I decided to try and new recipe for our BBQ and it was so good that I think I am going to try and make it again this year.  I wanted to share it with all of you incase you wanted to try something new! Basically for this recipe you boil some carrots and then soak them in a marinade overnight to give them that “hot dog” flavor.  Then you cook them up and put them in a bun, lettuce wrap or all by itself…however you eat your hot dogs.  I put mine in a regular hot dog but and topped it with ketchup, mustard and a little relish.  You can also use a sprouted, low carb or many of the other hot dog bun options out there.  A good place that has low carb bread options is The Great Low Carb Bread Company .  I wouldn’t say that this tastes exactly like hot dog but I made these before and I will continue to keep making them so that has to mean something right.  If you are daring enough and willing to keep an open mind, I highly recommend that you giving this recipe a try! Quick Easy “Meal Prep” Chicken Quesadilla

        Ok so I know what you are thinking.  Am I really showing you how to make a quesadilla?  That seems so easy!  But yes!  Thats the point!  I want to show you guys how meal prepping and getting ready for the weekdays not have to be boring or mean that you have to eat the same thing over and over again! So today I am doing the second recipe to my meal prep easy meals- chicken edition.  And this time I am making one of my all time favorites…Mexican food!  I use the chicken breast I grilled earlier this week.  I like using the chicken to create some of my favorite food.  I love making nachos, tacos, taco salads and of course chicken quesadillas.  SO I am sharing with you one of my favorite ways to use pre cooked chicken to make something spicy, delicious and that definitely hits the spot when taco Tuesday comes around!  I hope you love this as much as I do! Healthy Strawberry Oatmeal Cookie Recipe

        So if you don’t know I love baking!  Kevin and I actually started a baking business!  I get a lot of questions about how baking has affected my weight loss journey.  I will definitely make a blog all about how I managed to bake and lose over 300 pounds!  However, to somewhat answer that question I feel that it has really helped me grow as a baker.  I am constantly trying out new recipes, and trying to make my favorite sweets “healthier.”  I also love trying out other recipes and seeing what recipes from others that I love!!!  So in that way, baking has definitely opened my eyes to trying to create and try healthier alternatives to treats! Quick Easy “Meal Prep” Chicken Parmesan

         I love getting all of my food, snacks and veggies all ready on Sunday so that I am ready to go once Monday hits.  Having all of my food ready to go for the week is definitely something that helps me stay on track and stick to my healthy eating choices.  However meal prepping for me does not always work out so well all the time.  There are days, even weeks where I can eat the same thing over and over again and love it!  But then there are those times when I find that I cannot look at another piece of grilled chicken.  Those are the times that I find myself dreading mealtime and craving something else…like nachos.  Kevin and I go to the gym right after work so we do not get home until after 7pm every night which makes cooking dinner really challenging to do, especially since we are both starving when we walk through the door.  We both pretty much love the same foods, however sometimes we feel like different things!  So with all of that being said I have come up with a way where it allows us to pretty much be able to eat right when we walk through the door, stick to our healthy eating plan, and allows us to eat what we feel like that night!  Pretty perfect!  So I am going to be sharing with you guys our easy “meal prep” and how we like to stay on track during the week and…
