I just love pesto. When I started WW I knew I had to try and make my own pesto. A pesto that not only tasted really good, but that was a little lower in points and calories. Don’t get me wrong, there is nothing wrong with enjoying regular pesto, but I wanted to create something that I can literally put on everything but not use all my points for pesto! So I searched the WW app and found this pesto recipe! I tried it out and it was amazing BUT after making this a few times I made some tweaks which I think makes it extra perfect! This pesto is great with pasta, on sandwiches, with zucchini noodles, chicken salads….I literally put this on everything and it’s so so good! You can first toast the pine nuts on the stove until they are golden brown and it makes this pesto SO good, but I found that I just like to throw everything into the blender without toasting the pine nuts too and in my opinion, it’s a little quicker and tastes just as good! The gates are finally open! After being closed for over a year, Disneyland is open again!!!!Disneyland closed on March 13, 2020, due to Covid 19, and the gates opened up again on April 30, 2021. Now, the happiness and magic we all needed are back in the world…even though the world still looks a little different. Kevin and I were able to be back in Disneyland for opening day which was truly a dream come true. A lot is different and changed in the parks. I have to say, with all the changes, new rules and yes, even with wearing masks, none of the magic was lost, gone, or missing. I think this has to be one of my new favorite recipes and it is so so simple and easy to make! What I love is not only is this recipe simple, but it’s delicious, full of flavor, and super filling! You can switch up the veggies, protein, and sauces and have several “different” recipes. Another way to mix things up is to add different fruits or nuts. Cashews are really good in this recipe too! Slightly toasting the rice in the pan is a game changer! If you didn’t know I am in recovery from a Binge Eating disorder AND on WW trying to lose some weight. These two things are hard to do together, but I am making it work for me. Part of my weight loss journey this time around is really changing my relationship with food. I am really focusing on eating foods I love, and not labeling foods “good or bad”. Restricting certain foods is something I used to struggle with on my weight loss journey in the past. Happy Valentine’s Day! I have the sweetest treat to share with you today! I don’t know about you, but I love Rice Krispy treats. I especially love getting Rice Krispy Treats in Disneyland when they are so cute and themed and covered with chocolate and sprinkles! Since I can’t get them in Disneyland right now, or every day, I thought I would make some at home! Being on a weight loss journey, being on WW, and trying to change the relationship I have with myself and with food- this was a little tricky. I wanted to keep these as “normal” to the original recipe as I could and not add in fake marshmallows, sugar-free everything and make them so “diet” friendly that 1. They didn’t taste as good. 2.
