Valentine’s Date Night In With Pizza and Cookie Ice Cream Sandwich Recipes

For Valentines Day it is sometimes just nice to stay home, wear comfy PJs, watch movies and snuggle up on the couch and not worry about crowds, reservations or what to wear.  On Valentine’s Day Kevin and I like to go out and do a fun activity together, but we also love staying home.   So I thought what better way to celebrate a nice Valentine’s Day at home than with some of our favorite foods…Pizza and ice cream sandwiches!  So today I am going to be sharing with you one of our favorite go to meals for when we just want to stay home and relax but still do something fun together…cook!  We love pizza and ice cream.  But we both have our health and fitness goals in mind.  So we love making these comfort foods at home, save on a lot of calories and still enjoy our favorite foods, especially on a holiday that is all about love!  So sit back, relax and enjoy this super easy, healthier version of delicious pizza and ice cream sandwiches!

Pizza –

There are so many different ways you can make pizza at home.  Over the years Kevin and I have made and tried so many different healthier alternatives for pizza.  But today I thought I would share one that is super simple and fast to make that is not only low in calorie but also delicious!  You can add any toppings that you like and customize it to you.  I love adding lots of veggies and sometimes even some turkey pepperoni.  Kevin loves keeping it simple and likes turkey  sausage or pepperoni and cheese.

 

 

FlatOut Pizza Recipe

INGREDIENTS 

Flatout Flat Breads

Pizza Sauce (low sodium/no sugar added)

Mozzarella Cheese (lite or reduced fat)

Onions

Peppers

Mushrooms

Turkey Pepperoni

Any other toppings 

 

INSTRUCTIONS

1. Preheat oven to 350° F

2. spread sauce on Flat-out bread 

3. Sprinkle cheese to cover sauce

4. Top with your favorite pizza toppings

5. Bake for 10 minutes 

6. Enjoy!

 

 

 

Cookie Ice Cream Sandwiches –

OK guys seriously I don’t think it gets much better than this!  You have cookies.  You have ice cream.  You have high protein.  This is the perfect little treat you don’t need to feel guilty about.  I still only eat these as a treat, however they are the perfect way to treat yourself without going too crazy, and I am addicted!  The ice cream and bars are amazing on their own, but when you bake the bars and add ice cream in between it doesn’t get much better than that!

You can combine your own favorite cookies or bars to make this recipe but I LOVE Quest bars for this recipe.  You can also choose whatever ice cream you like, but right now Halo Top and Enlightened have been the ones I have been reaching for.

My favorite combo of these treats has to be Rocky Road Quest bars with Halo Top or Enlightened Mint chip ice cream.

Kevin loves cookie dough Quest bar with chocolate Halo Top.

We have tried so many different combos and we love them all!

Cookie Ice Cream Sandwich Recipe 

INGREDIENTS

Quest Bar

Halo Top or Enlightened Ice Cream

 

 

INSTRUCTIONS

1. Preheat oven to 350° F

2. Cover cookie sheet with parchment paper

3. Unwrap quest bar and microwave for 10-15 seconds, just enough to make it soft

4. Cut the quest bar in half

5. Roll the pieces of quest bar into balls and flatten them to make 2 “cookies”

6. Bake in the oven for about 5 minutes or until they are a golden brown color

7. Remove cookies from the oven and let the them cool

8. After the cookies are cooled scoop your favorite ice cream to match your quest cookie flavor and top with another cookie to make a sandwich

9. Enjoy!
