Baked Pumpkin, Oatmeal, Chocolate Chip Muffins

I was so excited when I found this recipe that I knew I had to try it out!  I loved the ingredient list and how simple it looked to make.  I hate when I see a recipe that looks so good, but then I look at the ingredient list and it is filled with a bunch of different ingredients that I will specifically have to go out and buy and then will probably never use again.  So this one sounded good, was very simple and easy and so BOOM I decided to try it!  I am so glad I did!!  The are the perfect little breakfast to have with coffee, or a great afternoon snack.  I like how it had the added touch of some chocolate chips, but that is totally optional, though I highly recommend adding some!  Whether it be sugar free, dark chocalte or dairy free.  There are so many options and a little chocolate never hurt anyone!  I would definitely store these in an airtight container and keep them in the fridge.  I liked warming them up and eating them hot, but letting them come to room temperature to eating them right

       Happy Friday!!! It feels like the weeks are just flying by (I say that on Friday though haha) This week, it was back to a pretty normal week for me.  Not so crazy like it has been for the past few weeks, but still really busy.  The weather is finally starting to get chilly, which is my favorite time of the year.  The leaves start changing colors, the nights are chilly and you can snuggle up in a big comfy robe and under lots of blankets while listening to Christmas music…ok maybe a little too early for the Christmas music!  If you didn’t know, Kevin and I are teachers by day and bakers by night.  We had a huge cookie order for today and it has kept us really busy this week after work.  We were able to workout Monday – Thursday and then it was right into the kitchen to bake.  The cookies came out so cute so it was so worth all the long hours and lack of sleep.     ALSO my first Dietbet began on Thursday!  I am so excited to be hosting my first game and I am so excited and happy to get

Three Healthy Side Dishes for Thanksgiving 2017

    I cannot believe it is almost Thanksgiving!!!  I know the holidays can be a hard time of year, especially with all of the parties and gatherings and …food.  I know it is is so hard to stick to our health and fitness goals, especially around this time of year.  I  know for me, especially in the past, Thanksgiving was a time I would eat so much I would make myself sick.  There was just so much food around, and it was so hard for me to say no.  I did not know much about portion control and I was definitely in a dark place in terms of self worth and my relationship with food.  It took many years to change these patterns and behaviors and it is honestly something that I still struggle with.  With that being said, in the past, while I was on my weight loss journey, Thanksgiving turned into a time where I completely deprived myself of eating anything “off plan”.  I sat and watched everyone else eat and enjoy themselves, and as proud of myself as I was that I was not eating anything, I was still miserable.  So after a few years of trying to figure out what I wanted to do and what was best for me, I decided to just enjoy life and stop using food as a

Happy Saturday!!  This week has been crazy…and fun…but mostly crazy.  Monday was a very exciting day!  I stayed home doing some exciting things (more details when I can tell you I promise). Then we rushed over to the gym to workout!  I was feeling super tired and drained after such a busy day, and did not feel like going to the gym.  However I felt so much better once we got there!  It’s so funny how working out actually makes me feel better now, and I do not dread it as much as I used to (although yes there are days that I totally do not want to go). The rest of the week felt like a whirlwind.  My days were so thrown off and I was always a day ahead, which is not good.  I don’t think the time change helped with it being pitch dark at 5:00pm.  Since we had no time to meal prep or really go grocery shopping this weekend, coming up with meals or going to the grocery store after the gym was hard and rushed, since Kevin and I are both starving after the gym and ready to eat.  I kept telling myself that some days
