Kevin and I recently tried this recipe and we love it!  I wanted to share it with you guys too.  This recipe is not only delicious but it is super simple and easy to put together and was ready in no time.  This meal is delicious on its own or it can be served with brown rice, cauliflower rice or wrapped in a tortilla or lettuce cups.  We didn’t use any olive oil but we did sprinkle a little extra taco seasoning over our vegetables.  We will definitely be making this over and over again when we have any Mexican food cravings (which is a lot).  I hope that you love this recipe as much as we do!

Fast and Easy Fajita Chicken and Vegetables

Recipe Adapted from Chicken Burrito Bowls

Prep Time: Less than 10 Minutes

Cook Time: 25 Minutes

Total Time: Less than 35 Minutes

 

INGREDIENTS 

3 to 4 Boneless Skinless Chicken Breasts depending on size

3 Bell Peppers

1 Onion

Olive Oil (optional)

1 Tbsp (+extra) Taco Seasoning

Salt and Pepper

1 Jar Salsa

 

INSTRUCTIONS

1. Preheat oven to 400˚F/200˚C

2. Line a baking sheet with foil

3. Slice peppers and onions 

4. Place Chicken, Sliced Bell Peppers and Onions on the baking sheet (drizzle with olive oil if desired)

5. Sprinkle Taco Seasoning on both sides of chicken breasts

6. Sprinkle Salt and Pepper and extra taco seasoning on the Bell Peppers and Onions mixing them to coat 

7. Top each chicken breast with Salsa

8. Bake in preheated 400˚F oven for 25 minutes

9.Rest the chicken for 10 minutes before slicing into strips

10. Enjoy!
