“What’s wrong with your legs?” It’s time to address the elephant in the room. My legs. I think the questions about “why do my legs look like this, why are they so big, why don’t you have surgery on them, do you have lipedema, why do they look so much bigger than the rest of your body…” All of these comments and questions are the ones I get asked about the most and almost daily. I am not upset about these questions…they are all valid questions and to be honest, sometimes I think them to myself…why do my legs have to be so big. So I get it that a lot of you may have these questions. The truth is… I have big legs. But why you may ask? Well, you can blame it in genetics, or you can simply just blame it on the fact that when I was 500 pounds, I carried a lot of weight in my legs. That’s just how it went. Why order take-out when you could enjoy this sweet and spicy garlic infused sauce mimicking General Tso’s Chicken. On my weight loss journey, I found myself wanting healthier versions of some of my favorite Chinese takeout dishes. Traditional General Tso’s Chicken is breaded and fried chicken thighs covered in sweet and spicy sauce which is loaded with calories. I found, by making just a few simple switches I could satisfy the craving without all of those added calories. Another one of my favorite things when recreating recipes is adding vegetables. These Veggies add bulk to my meal and also have the added benefit of the micronutrients. I love making this recipe instead of ordering the calorie-packed takeout version. Marinating the chicken with the egg white is the key to getting the right texture. You cook the chicken without frying it or adding extra calories from breading and still get some crunch. Healthy Deconstructed Enchiladas Recipe I don’t know about you, but Mexican food is my weakness. It is definitely my favorite food. During my weight loss journey I found ways to still enjoy my favorite types of food…but just made them work for me. Deconstructed Enchiladas are perfect to meal prep, serve to your friends and family, and definitely helps me keep my Mexican food cravings at bay. Since it is a cold day out, I figured I would cook up these Deconstructed Enchiladas and have a nice cozy fiesta at home…in my pajamas. I believe in eating everything in moderation, so while I do not intentionally make all meals low carb ( I count calories) I do my best to make everything lower in calorie, lower in fat, and sometimes lower in carbs. That is just what works for me. I will also weigh out the portion that works for me within my calories. So what toppings you decide to add to these, or the amount you eat, is completely up to you.
