Apple Cinnamon Muffins

I don’t know about you, but I love muffins.  You are going to want to try these Cinnamon Apple Muffins.  They are full of flavor and make a great choice for breakfast because they don’t have too much sugar.  They can also be enjoyed as an afternoon treat with a cup of coffee or tea.  It’s the best day when you have a mini muffin.

Cinnamon Apple Muffins

Apple Cinnamon Muffins

Ingredients

  • 1 Tbsp All Purpose Flour
  • 1 Tbsp Dark Brown Sugar
  • 1 Tbsp Salted Butter
  • 3/4 Cup All Purpose Flour
  • 3 Tbsp Quick Cooking Rolled Oats
  • 1/2 cup Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/4 tsp Ground All Spice
  • 1 egg
  • 3/4 Cup Unsweetened Apple Sauce
  • 1/4 cup Nonfat Milk
  • 1/4 Cup Sugar
  • 1/2 Tbsp Canola Oil
  • 1 tsp Vanilla Extract
  • 1 Medium Apple

Instructions

  • Preheat oven to 425°F.
  • Line a 24 mini muffin pan with paper liners.
  • To make topping, with your fingertips or a fork, combine 1 Tbsp all purpose flour, brown sugar and butter in a small bowl until crumbly.
  • To make muffins, in a large bowl, combine 3/4 c all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, oats and allspice; stir in chopped apples.
  • In a medium bowl, whisk together egg, applesauce, milk, granulated sugar, oil and vanilla extract until blended.
  • Stir applesauce mixture into flour mixture just until blended.
  • Evenly divide batter among prepared muffin cups (about 1 Tbsp in each); evenly sprinkle with reserved topping.
  • Bake until toothpick inserted in center of each muffin comes out clean, 8-10 minutes. Transfer muffins from pan to a wire rack and cool completely.
