I don’t know about you, but I love muffins. You are going to want to try these Cinnamon Apple Muffins. They are full of flavor and make a great choice for breakfast because they don’t have too much sugar. They can also be enjoyed as an afternoon treat with a cup of coffee or tea. It’s the best day when you have a mini muffin.

Apple Cinnamon Muffins
Ingredients
- 1 Tbsp All Purpose Flour
- 1 Tbsp Dark Brown Sugar
- 1 Tbsp Salted Butter
- 3/4 Cup All Purpose Flour
- 3 Tbsp Quick Cooking Rolled Oats
- 1/2 cup Whole Wheat Flour
- 1 tsp Baking Powder
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1/4 tsp Ground All Spice
- 1 egg
- 3/4 Cup Unsweetened Apple Sauce
- 1/4 cup Nonfat Milk
- 1/4 Cup Sugar
- 1/2 Tbsp Canola Oil
- 1 tsp Vanilla Extract
- 1 Medium Apple
Instructions
- Preheat oven to 425°F.
- Line a 24 mini muffin pan with paper liners.
- To make topping, with your fingertips or a fork, combine 1 Tbsp all purpose flour, brown sugar and butter in a small bowl until crumbly.
- To make muffins, in a large bowl, combine 3/4 c all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, oats and allspice; stir in chopped apples.
- In a medium bowl, whisk together egg, applesauce, milk, granulated sugar, oil and vanilla extract until blended.
- Stir applesauce mixture into flour mixture just until blended.
- Evenly divide batter among prepared muffin cups (about 1 Tbsp in each); evenly sprinkle with reserved topping.
- Bake until toothpick inserted in center of each muffin comes out clean, 8-10 minutes. Transfer muffins from pan to a wire rack and cool completely.
