Sometimes in life, we are faced with challenges or struggles that we must deal with or overcome. Sometimes these tasks are simple, and we are able to quickly accomplish what we set out to do. Then, there are the times we are faced with what seems like the impossible. Suddenly, you find yourself stuck, in too deep and feel like there is no way out. These are the times we must really look within and trust and believe in ourselves. Most importantly, we must believe in ourselves. About 5 years ago, I found myself weighing more than 500 pounds! I felt like I could never lose the weight that I needed to lose. I felt like I was not strong enough, and that I would never be able to do it. Needing to lose over 300 pounds seemed impossible and I did not even know where to begin. Now with changing my diet and exercising, I have lost over 300 pounds and I am in the process of having the excess skin removed from the extreme amount of weight that I have lost. This recipe is definitely one of our favorites and we make it all the time. It is so simple and yet so delicious which is why we make it all the time. It is so simple to just throw in your left over chicken or it can be made easily with fresh chicken or your other favorite proteins such as shrimp, steak or tofu. Feel free to play around with different protein options, veggies or seasonings. You really can’t go wrong.Quick Easy “Meal Prep” Chicken Fried Rice Recipe INGREDIENTS – Cooked Chicken Breast (amount depends on your meal plan) – Cauliflower rice, cooked brown rice or cooked white rice – Mushrooms – Zucchini – Bell Pepper – Soy Sauce – Garlic – Egg – Chili Flakes or Hot Sauce (optional if you like it spicy) INSTRUCTIONS 1. Sauté garlic and cauliflower rice, cooked brown or white rice 2. Add other vegetables and allow them too cook 3. Crack the egg and allow it to scramble and mix with all of your rice and veggies 4. Happy 4th of July Weekend! Last year I decided to try and new recipe for our BBQ and it was so good that I think I am going to try and make it again this year. I wanted to share it with all of you incase you wanted to try something new!Basically for this recipe you boil some carrots and then soak them in a marinade overnight to give them that “hot dog” flavor. Then you cook them up and put them in a bun, lettuce wrap or all by itself…however you eat your hot dogs. I put mine in a regular hot dog but and topped it with ketchup, mustard and a little relish. You can also use a sprouted, low carb or many of the other hot dog bun options out there. A good place that has low carb bread options is The Great Low Carb Bread Company .
