What keeps me motivated? Non Scale Victories like this.

I am shocked.  Surprised.  Confused. Excited.  Shocked.  Did I say shocked?  I had a huge non scale victory today, and it came at just the right moment.  I have been working my butt off to recover from not only one skin removal surgery, but two within the last 9 months.  Over 15 pounds of excess skin has been removed from my body so far, with still several surgeries to go.  I have finally (somewhat) returned to my weight that I was pre surgery, however for whatever reason the scale is not stuck on that weight and will not move.  I am, for now, avoiding the scale and just focusing on recovering. I am sticking to my eating plan and working out 6 days per week, which feel so good to be able to do again! I went to the mall with my sister to just walk around, shop and get coffee.  I then heard her say “Jacqueline I found the cutest outfit for you.”  When I walked over to see what she was talking about the first thought that came into my mind was “thats so cute” but it was immediately followed by “but that will never fit me”.  It was a super cute, 2 piece, CROP TOP jumpsuit.  Of course when I told my sister it would not ever fit me, she would not accept that answer and said we were not leaving until I tried it on.  She grabbed a size that I thought would for sure not fit and…

Movie Theater Snacks

I love watching movies.  I love sitting down any time, any day, at home or at the movie theater.  But I also love snacking, especially while I am watching a movie.  So this can create a real problem for me and it can make me sometimes feel more frustrated when watching a movie because I cannot just mindlessly snack like I did before.  But just because you may be trying to lose weight or follow a healthier lifestyle and overindulging in your favorite snack foods is not something you want or can do, it does not mean you can NEVER snack and can NEVER enjoy snacking while watching a movie.   Over the years I have tried a lot of tricks to be able to still enjoy my snacks, especially when I go to the movie theater and there are so many temping snacks available right at my fingertips. I have created a list of my favorite snacks to enjoy while watching a movie at home, or out at the theater. Of course you can always snack on fruit or veggies (which I do a lot) but i want to come uo with some better ideas than that!  Something that will give you that nice sweet and salty snack treat like you can get with popcorn and candy at the movie theater, as well as volume so you can snack for a little longer and feel more satisfied! How I Started Exercising…Even at 500 Pounds.

500 pounds.  A number I never dreamed I would ever see when I stepped on the scale. For me, while I was gaining weight, I avoided the scale at all costs.  I did not want to see what the number was.  For me, if I did not see it, it was not real. Being in denial about my weight did not do me any good.  To be honest it probably made it worse. Sometimes I think “if I would have stepped on the scale earlier, I would have never let myself to reach that number.”  I am a firm believer that everything happens for a reason, and not living in the past.  I try not to think about the “what if’s”, no matter how hard it is for me not to do. So saying “What if I weighed myself sooner” does not change the fact that I didn’t and does not help me in any way now So there I was, weighing over 500 pounds.  I could barely get out of bed, put my shoes on, or get dressed without getting out of breath. Healthier Meatless Nacho Recipe

I love nachos!  I would definitely say that nachos are my favorite food.  When I started my journey about 5 years ago, nachos were definitely something that I missed!  I would treat myself to nachos every year on my birthday.  Over the years I thought to myself “why do I allow myself to only enjoy nachos one day of the year?”  That got me thinking.  I now have several different ways that I love making healthier versions of nachos at home that I can enjoy anytime that I want them.  Today, since it is Friday and on Friday’s during Lent I eat no meat I decided that I wanted to share a meatless nacho recipe with you guys that is super simple and delicious.   Healthier Meatless Nacho Recipe INGREDIENTS Flatout Flat Breads Reduced Fat Shredded Mexican Cheese Blend Fat Free Beans (Refried or Black) Non fat Plain Greek Yogurt Salsa   You can of course add meat if you would like but for me, the cheese and beans count for my protein.Go ahead and add all of the veggie toppings that you like.Tomatoes, Jalapeños, lettuce, onions, cilantro…all so good.  I kept itpretty basic tonight and I loved it.  I mean you can’t really go wrongwith nachos.  INSTRUCTIONS 1. Preheat oven to 425° F  2. Cut a flat-out flat bread into little triangles  3. Place triangles on a cookie sheet lined with foil and sprayed with non-stick cooking spray 4.
