        Where does the time go? Seriously how can it be 6 months already since my second skin removal surgery and 10 months since my first surgery!?!?  I feel like I blinked and here we are.  Although I have to admit, while I was going through the healing, time definitely did not fly by…time actually stood still haha. There is a lot of talk and debate regarding the whole skin removal surgery process.  Some people are all for it, while for others they choose not to have their excess skin removed.  There are also those who think its not right and not needed and consider it a “cosmetic procedure”.  Don’t get me started on that one…I will save that for another day and another blog.  Whether you choose to have your excess skin removed, or not is a very personal decision and it is completely up to the person going through it.  For me, after losing over 300 pounds, It was very much needed, my skin caused me a lot of physical and mental pain. So whatever your decision is on it, or wherever you stand its ok.  I am just sharing with you my experience and my journey of going through the process of having my excess skin removed because it is the right choice for me. Quick Easy “Meal Prep” Chicken Quesadilla

        Ok so I know what you are thinking.  Am I really showing you how to make a quesadilla?  That seems so easy!  But yes!  Thats the point!  I want to show you guys how meal prepping and getting ready for the weekdays not have to be boring or mean that you have to eat the same thing over and over again! So today I am doing the second recipe to my meal prep easy meals- chicken edition.  And this time I am making one of my all time favorites…Mexican food!  I use the chicken breast I grilled earlier this week.  I like using the chicken to create some of my favorite food.  I love making nachos, tacos, taco salads and of course chicken quesadillas.  SO I am sharing with you one of my favorite ways to use pre cooked chicken to make something spicy, delicious and that definitely hits the spot when taco Tuesday comes around!  I hope you love this as much as I do! More Than Just Losing Weight

        Since May is National Mental Health Awareness Month, I thought I would share a little bit about a topic that I feel is not talked about enough,  the mental health aspects of losing weight.  Mental health is such a huge factor when it comes to gaining weight, obesity, losing weight and even maintaining your weight.   For me I really wish that I was more aware of how much of a mental challenge it was when I was over 500 pounds and still is as I continue this journey.  I really wish that I was given the tools and knowledge to help me with this journey sooner.  When I was at my heaviest I was not okay physically or mentally.  Now after losing more than 300 pounds I am still overcoming some body image issues.  A few years ago I started talking to a therapist and I am so happy that I did.  A lot of times we are afraid or scared to ask for help or admit that we need help.  I feel especially when it comes to more personal issues or how feel or think about ourselves it is especially hard to share those thoughts and feelings.  We are often afraid to be judged, laughed at or told what we feel is invalid or that we shouldn’t feel that way.  I don’t know about you but when I am sad just because someone says “don’t be sad anymore” it doesn’t make me magically happy again.   It is so easy…

Healthy Strawberry Oatmeal Cookie Recipe

        So if you don’t know I love baking!  Kevin and I actually started a baking business!  I get a lot of questions about how baking has affected my weight loss journey.  I will definitely make a blog all about how I managed to bake and lose over 300 pounds!  However, to somewhat answer that question I feel that it has really helped me grow as a baker.  I am constantly trying out new recipes, and trying to make my favorite sweets “healthier.”  I also love trying out other recipes and seeing what recipes from others that I love!!!  So in that way, baking has definitely opened my eyes to trying to create and try healthier alternatives to treats!
