My 30th Birthday in Disneyland

        On Monday February 20, I turned 30 years old!  I am still in complete shock haha. I have no idea how I am 30 already!  A few days after my 25th birthday is when I finally decided that it was time to change my life.  I was over 500 pounds, could barely get out of bed, and did not love or respect myself or my body. I used food to comfort me and the more unhappy I was, the more I kept eating. The actual moment that I decided enough is enough was a few months before the “change” happened.   My sister, Kevin and I decided to take a trip to Disneyland!  We had not been in a while, because my weight really kept me from doing a whole lot.  I decided a trip to Disneyland was just what I needed.  I had no idea at that time that my life would change forever. I had to rent a wheelchair because I could barely walk from the car to the main gate and I am embarrassed to admit this now, but I felt like I was about to die.  Everything hurt.  I remember that day so clearly.  I was wheeling down Main Street and everyone was staring, pointing, laughing.  Then it happened.  I tried to go on a ride….bad idea.  I picked a ride I thought I would fit on, except I forgot one teeny tiny detail…the turnstile.  And I got stuck.  That was my low point.  It was at that moment I decided that I needed…

My Favorite Snacks to Bring With Me When I Travel.

        I have a few special trips coming up over the next few weeks that I am so excited about!  Since I will be traveling a lot, I thought it would be the perfect time to share some of my favorite snacks that are perfect to take on the go, on the airplane as well as great options to keep with you in your purse or bag.   I love to travel, but sometimes it can be hard, especially when you have certain goals in mind and when you really want to stick to your healthy eating plan.  Travel can definitely make our eating choices more challenging and harder to stay on track.  Over the years I have learned that it is really important to have healthy snack options with you at all times, especially when you are out of town because the last thing you need is to have to worry about finding a healthy snack option, especially if you are starving!  Most of the time we will reach for something that is convenient when we are really hungry and won’t care what it is.  Sometimes we can really regret it later.     Here are a few of my favorite travel snack options.  Please let me know if you have tried any of these options or what your favorite snacks are when you travel. 1.  Fresh Fruit  This option is great to bring on the airplane or to eat in the car or somewhere where you will be eating it sooner…

Valentine’s Date Night In With Pizza and Cookie Ice Cream Sandwich Recipes

        For Valentines Day it is sometimes just nice to stay home, wear comfy PJs, watch movies and snuggle up on the couch and not worry about crowds, reservations or what to wear.  On Valentine’s Day Kevin and I like to go out and do a fun activity together, but we also love staying home.   So I thought what better way to celebrate a nice Valentine’s Day at home than with some of our favorite foods…Pizza and ice cream sandwiches!  So today I am going to be sharing with you one of our favorite go to meals for when we just want to stay home and relax but still do something fun together…cook!  We love pizza and ice cream.  But we both have our health and fitness goals in mind.  So we love making these comfort foods at home, save on a lot of calories and still enjoy our favorite foods, especially on a holiday that is all about love!  So sit back, relax and enjoy this super easy, healthier version of delicious pizza and ice cream sandwiches!  I hope that you love these as much as we do.  Sending lots of love from us to all of you! Yogurt Covered Strawberry Recipe

        With Valentine’s Day being only a week away I thought it would be the perfect time to share this delicious treat that I have been loving with you guys!  I like mixing up this recipe and not just covering strawberries in my favorite dark chocolate but decided to go with a healthier alternative as well…greek yogurt.  I like using nonfat vanilla greek yogurt and paring it with all fruit especially strawberries.  I decided to make it more festive for Valentine’s day and added some pink dye.  I added some pink sugar sprinkles and some cute heart sprinkles for an extra touch.  You know I still had to get some chocolate in there with some chocolate chips.  No matter what occasion you are making these delicious treats for I promise that they will be super tasty and super cute.     INGREDIENTS Strawberries Nonfat Vanilla Greek Yogurt (or yogurt of your choosing) Pink food coloring or dye (optional) Toppings of your choice sprinkles or chocolate chips (I used Lily’s Dark Chocolate baking chips sweetened with Stevia)     INSTRUCTIONS 1. Divide yogurt into two bowls.  In one bowl add a few drops of pink dye until the desired shade is reached. 2. Dip your strawberries in the yogurt to cover them and lay them on a Baking sheet lined with parchment paper (or plastic wrap)  3. Put in the freezer for one hour to let the yogurt harden. 4.
